Student Weeks at Milkweed
Spend a week cooking, foraging, preserving, and preparing alongside Chef at Milkweed.
Student Weeks are one-on-one, immersive experiences designed for cooks, chefs, home cooks, and people just starting out in the kitchen, who want to spend time inside the daily happenings of the Milkweed kitchen. Throughout the week, students work alongside Chef preparing meals, baking bread, making fresh pasta, working with different proteins and vegetables, preserving seasonal ingredients, foraging, and helping build the weekend tasting menu.
Student Weeks do not follow a fixed curriculum. Each week develops around the season, so a student who joins in the spring may have a very different experience than someone who visits in the fall. Some weeks may lean heavily into wild mushrooms, others into berries, flowers, or game. Every week is dictated by what the landscape has to offer.
Students participate in every part of the process - from prep through dinner each evening. Some tasks are hands on while others are demonstrated. During the weekend, the student continues working alongside Chef while also enjoying the full Milkweed guest experience, including Friday dinner, Saturday breakfast and lunch, Saturday evening's tasting menu, and Sunday brunch.
At the end of the week, each student leaves with a personalized field notebook documenting the recipes, techniques, ratios, and notes from their time at Milkweed, along with a sourdough starter to continue baking at home, chef knife, and apron.
Accommodations
Student Week includes a private room or tiny cabin Milkweed.
Depending on availability the main cabin room where a student may stay is the Forager Room, which becomes the student's private room for the week. During the weekdays, students have the main cabin to themselves outside of work hours, giving them time to read, review their field notes, enjoy the sauna, take a mountain bike out on the trails, or simply relax before the weekend guests arrive.
A single student or if two students attend together, the other accommodation available is Buddy Camp, our restored hunting camp located next to Chef's cabin. Buddy Camp features two luxury twin beds, a wood stove, propane stove, electricity, a potable filtered water sink, and everything needed to make coffee or tea in the morning. It's a quiet place to unwind after long days in the kitchen while remaining just steps from where we'll be cooking.
All accommodations, meals, beverages, and transportation to and from airport during the week are included as part of the Student Week experience.

After reviewing your application, we'll reach out to schedule a phone conversation. It's an opportunity to get to know one another, answer questions, discuss available dates, and make sure the experience is a good fit for everyone involved.
Following our conversation, we'll send additional information, including an invoice for the participation fee and instructions for reserving your week. The participation fee is $5,000 per person, or $7,500 total for two students sharing Buddy Camp. We do have scholarship money to apply towards student weeks, so please let us know in your application if you’d like to considered for scholarship.
